Testers, assemble!

I have finally zipped up a pack of eight gluten-free bread recipes for testing, along with the current draft of the book. They are available to anyone who is willing to sign a reasonable Non-Disclosure Agreement and give me feedback on the recipes and their results. I don't require that testers be gluten- or wheat-free themselves -- however, keep in mind that 90% of the quality of bakery French bread may be 60% better than what celiacs normally get, but it's still 10% below what the average person is used to. :)

White sandwich bread
French bread
Molasses bread (that stuff you find at Outback)
Challah
English muffins
Pizza crust
Chapati/roti
Flour tortillas

Drop me a line if you're interested; if you're the master of a good bread machine, I need you desperately. Testers will be mentioned in the book credits.

The "gluten free" setting on bread machines is not valid for these recipes. I have no idea whether a bread machine is even capable of making them; I suspect one would need an advanced programmable one, and really know how to use it. :/
