torquill: The dough has gone to war... (baking)

Anyone want to pitch in on an order to King Arthur Flour? All I need is cheese powder, and it's kind of silly to order just that. Especially when they keep offering free shipping or gifts for orders over $60 or so. They have really good pans and equipment, but I have everything they carry that I need... and I either can't use their mixes or have no need to. It's good stuff, though.

It isn't urgent, but I should get more cheese powder before the end of the year, if I keep indulging my cravings for mac&cheese as much as I have been. And holiday baking is upon us...

Edit: The yeast measure (2.25 tsp) for $4; the crumpet rings for $8; perhaps the rolling pin rings for $8; liquid measure for $5?

Edit: Gah! the orange cheese powder is no longer listed... I have to write them to ask whether they've discontinued it. (That would suck.)

I looked, but am not seeing anything I can't live without at the moment. If their sheet pans were stainless steel, I'd jump on it, but they are aluminum, and twice the price that the restaurant supply store downtown sells them for. :(

They're best for non-standard equipment... my jaw dropped at the rolling-pin rings that let you roll crust exactly to the right thickness (though I think I need a longer pin to take full advantage of that). It's clever and cheap, at $8 for a set of four pairs. For normal pans, I'd go to a restaurant supply place.

That would be unfortunate if it's no longer available.. I was actually thinking about asking you to order some of the cheese powder for me too until I saw the edit..

Of course even that stuff isn't really what I want.. one of these days I need to actually get around to trying to actively recreate the flavor of the "good old days" Kraft stuff somehow.. I'm sure it can be done, but I've just never sat down to do it..

Timing is everything

We were at the bakery in Norwich, VT, about an hour ago. We not only could have asked, we could have picked it up for you.

See, I have a set of those already :). Dug them out this morning in fact.

There is a cheese sauce powder in the bulk bins of one of my local grocery stores. I can check for wheat, is there anything else in particular that is a problem ingredient and likely to be in it?

The stuff I've seen has wheat as the second ingredient. Don't worry about it; there seem to be several vendors on the net that carry something similar, and while I may not opt for the "snack powder" (minimum order: 25kg bag), I did order a pound of cheddar cheese powder from Barry Farms, who says they get it "from the same company that uses that little foil packet in the box". We'll see how it is; the price is reasonable.
